Grilling Tips & Hints

All of our steaks are packed frozen in a cooler with frozen gel packs to keep the product refrigerated, if not frozen, during shipping. Should your product arrive still frozen, we recommend you remove from the cooler and place in your freezer if you do not intend to enjoy them immediately. For those steaks you wish to cook, you should place them in your refrigerator to finish thawing. They may remain there for up to five days in the vacuum sealed pouches. Should your product not be frozen when you receive it, please check to be sure they are cool to the touch and if so, remove from the cooler and place in your refrigerator or freezer depending on your needs.
  • To Defrost Your Steak
    1. We strongly recommend you defrost your steak in the refrigerator up to 48 hours prior to cooking, however, this will depend on the thickness of the steak. Defrosting your steak this way allows the juices to remain in the meat and results in a juicier steak.
    2. You may also defrost your steak directly from the freezer by placing them in a container of cold water. This method will take approximately two – four hours depending on the thickness.
    3. We do not recommend thawing your steaks at room temperature; bacteria multiply rapidly at 5°C to 60°C.
  • Grilling or Barbequing

      Doneness Chart
      Preheat your grill (barbeque) to approximately 260°C or 500°F
    2. Allow your steak to stand at room temperature for approximately 20 minutes before grilling.
    3. Lightly brush your steak with extra virgin olive oil or cooking oil. This will assist in searing your steak and get you great grill marks. (see chart).
    4. Cook until desired doneness. See our chart for your desired doneness.
    5. Always use tongs or a spatula to turn your steaks. Never pierce your steaks as this will allow the natural juices to escape, causing the steak to lose flavor and juiciness.
    6. We recommend seasoning your steak (with our Hilltop Steak Spice of course!), when it is nearly cooked to desired doneness. Most seasonings contain salt which, if applied prior to cooking, will draw out the natural juices and cause the steak to lose flavor.

  • Broiling
    1. Set your oven to Broil and preheat for approximately 10 minutes. If you use an electric oven, the oven door should remain ajar; if you use a gas oven the door should remain closed. We do recommend consulting your owners manual for specific broiling instructions as not all ovens are the same.
    2. Place your steak on a broiling pan and place in the oven so the distance of the steak is approximately 3 to 4 inches from the heat.
    3. Broil until desired doneness, turning only once. See our chart on determining doneness.
    4. After cooking, season as desired with our “Hilltop Steak Spice” or with a spice of your liking.
    5. Enjoy!
